Grated Carrot, Hummous Sandwich

Ingredients

For the hummous:

400g canned chickpeas
1 lemon juice
1 or 2 garlic cloves, crushed 
1 tsp ground cumin
100ml tahini (sesame seed paste) (optional) 
4 tbsp water
2 tbsp extra virgin olive oil

 

For the sandwich:

2 slices of fresh bread
½ carrot
A couple of spoonsful of hummous (see above!)
A handful of fresh rocket leaves

Step 1

To make the hummous, combine all the ingredients in a food processor and blitz until very smooth. If you don't have a food processor you can mash together in a bowl, but you will need to work a lot harder to get a smooth finish.

Serve with some extra salad on the side or some halved up cherry tomatoes.Younger babies might not be very keen on the rocket at first - but it's worth giving it a try, or you can try shredding it up and mashing it into the hummous. You can make your own hummous with the recipe here, or buy an organic ready made one - just check the ingredients list for any unnecessary 'junk' ingredients. If you make your own, the pot of hummous will last in the fridge for up to 2 days, or can be frozen for up to a month.

Top, tail and peel the carrot, then finely grate. For younger children use the finest grater and you might want to shred the rocket.

Spread the bread with hummous, then top with carrot and rocket. Cut into triangles (or circles, or stars, or whatever you fancy that day!) and serve.
